Arroz Con Pollo:

A very popular dish in both Central and South American countries, it consists on rice mixed with chicken but wait, that´s not an ordinary mix. It is based on a sofrito which is basically sauted onions, garlic and peppers with either shreded or full pieces of chicken. Once this mixture gets a nice golden color the rice is added and is left to cook slowly with water until is dry. Let it rest a little and enjoy a very fulfilling meal all done in one pot. Isn´t it wonderful to have so much sense of flavour and of time economy at the same time?

In fancy restaurants is also served on a shell while in the streets or economical kitchens around is served with crakers and a cold cerveza.
